Ingredients

  • 250-350 g chicken
  • 2 cups Seeraga samba rice—soaked for 25 – 30 minutes
  • 3 medium onions—finely chopped
  • 3 tomatoes, finely chopped
  • 2 bay leaves
  • 2 green chilies chopped
  • 2 tbsp ginger garlic paste
  • 1 cup mint leaves
  • 1/4 cup chopped coriander leaves
  • 1/4 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 cup whisked curd/yogurt
  • 3 cloves
  • 1 inch cinnamon stick
  • 1 star anise
  • 2 pods green cardamom
  • 1 tsp lemon juice
  • salt to taste
  • 4 tbsp cooking oil

Instructions

Preparation for Ambur Biryani:
  1. First, Wash chicken and Marinate chicken with turmeric powder and salt and let it rest for 5 min.
  2. Heat oil in a pan over low flame, saute bay leaves, star anise, cloves, cinnamon and cardamom.
  3. Add the onions and green chillies, saute for 1 to 2 mins.until they turn a golden brown color. and saute ginger garlic paste for a minute.
  4. Add the tomatoes and continue to cook they turn very soft until oil and gravy will come separating from the sides.
  5. When the mixture starts separating from the sides, add 1 tbsp curd and stir swiftly.
  6. Add marinated chicken and season with salt and add curd. Cook covered for 8 to 15 Mins.
  7. finally, add the coriander leaves, mint, red chilli powder and coriander powder,garam masala mix it and continue until chicken turns completely soft and transfer the chicken mixture to a bowl.
How to Cook Rice:
  1. Boil 4-5 cups(for 2 cups of rice) of water and add the rice.
  2. Add salt and the lemon juice and cook for 10 minutes until the rice is 70% cooked.

Note: In this stage, rice grains are firm and separated.

How to make the dum Biryani:
  1. Take the same pan in which it was cooked chicken masala.
  2. Spread the first layer of rice on it followed by another second layer of the chicken.
  3. continue layering till reaching the top of the pan.cover and cook few Minutes on the low heat until the rice has absorbed all the moisture and you can use dosa tawa/griddle for a dum process. after done this process and cook 20-30 mins over low heat.
  4. Serve spicy hot Ambur chicken biriyani with boiled eggs and raita.

Notes

Ambur biryani is made it Jeera samba rice only. So please try to use jeera samba rice or basmati rice.
