---Makes about 20 balls
Potatoes (450g), boiled with their skin on and chilled
Two spring onions and chopped it.
garlic powder 1/2 tsp
chili flakes 1/4 tsp
Salt and black pepper
2/3 cup (70g) cheddar cheese, cut as a cubes
1 beaten egg
Bread crumbs mixture
Oil 1 tbsp
Mash potatoes in a large bowl using a potato masher.
Add some green onion, chili flakes, garlic powder, salt & pepper. Stir to combine.
In another bowl combine bread crumbs and oil, until oil is absorbed.
Dust your hands with flour and take about a spoon of potato mixture flatten and add a cheese cube in the center Now wrap and form into a ball. Roll in flour, dip in egg and then roll in breadcrumbs mixture, pressing if necessary to stick well. Repeat with the rest of the mashed potato.
Pan Bake: Heat the oil in a large wide pot until oil is hot enough and gently lower the balls into the oil and fry golden and crisp.
(Oven Bake: Preheat the oven to 400F (200C).Place the ball into a parchment paper lined baking sheet.)
Bake for 15-18 minutes until golden and crisp. Don’t over bake otherwise the cheese will start to seep out.
