South Indian food is largely vegetarian and whatever anyone feels may be missing from the lack of meat is more than made up for in flavor.

Eggs are Many people who do not eat meat eat eggs. Delicious and quick to prepare this curry can be ready in 20 minutes. I call the easiest curry and everyone’s favourite. Meat lovers adore it and eggetarian vegetarians like it too.

Ingredients

  • 6 Boiled eggs
  • ----For Seasoning Eggs
  • 1/8 tsp Turmeric powder
  • 1/4 tsp pepper powder
  • 1 tsp chilli powder
  • 1 tsp Oil
  • Salt
  • ----For Egg Curry Recipe
  • 2 tbsp Oil
  • 1 Cinnamon Stick, 3 cloves, 2 cardamom
  • 1/2 tsp Cumin Seeds
  • 2 Onions
  • 1 or 2 Tomato
  • 1 tsp Garam Masala Powder
  • 1 tsp Coriander powder
  • 2 tsp Chili powder
  • 3 Green Chilies
  • 1 tbsp Ginger Garlic Paste
  • 1/2 tsp Turmeric Powder
  • 1/2 cup Coconut
  • Salt to Taste
  • Coriander Leaves
  • Required Water

Instructions

  1. first, we need hard boil 6 eggs.
  2. Now let us fry these boiled eggs, heat pan adds 1 tsp oil and add turmeric powder, red chilli powder, coriander powder, salt few pinches saute and add eggs fry them till crispy.
  3. Now to Make gravy Heat pan add oil – 2 tablespoons to it add cinnamon stick, cloves, cumin seeds, cardamon saute it for few seconds.
  4. Then add chopped onions Saute till it turns golden brown in colour.
  5. add garlic  & ginger paste and saute until the raw smell disappears. Add diced green chillies – 2 and saute
  6. Add Red chilli powder – 1 teaspoon, Turmeric powder – 1/2 teaspoon, Coriander powder – 1 teaspoon, Cumin powder – 1/2 teaspoon, Garam masala powder – 1 teaspoon, Black pepper powder – 1/4 teaspoon And saute well
  7. Add roughly ground tomatoes – 3 medium sized Cook them till tomatoes become smooth
  8. Add grated coconut some water and grind it to fine paste.add some cashew powder of 4 cashews and mix well. this two adds thickens and richness to the gravy.
  9. Add a cup of water and when it boils add fried eggs, coriander leaves and a teaspoon of fenugreek leaves
  10. Cook till oil appears on sides.
  11. Serve it hot with chapathi, roti or rice
