12 ounces button mushrooms
1 and 1/4 cup basmati rice
10 Cashew nuts, around
Mint leaves-leaves from around 10 sprig
1 large red onion (sliced lengthwise)
1 heaped teaspoon tomato, (chopped super fine)
1 heaped tablespoon of black cumin seeds jeera/ cumin seeds
1 tablespoon rice bran oil
1 teaspoon Turmeric
2 cups of water
Below Biryani masala serving
Salt, to taste
For Homemade Biryani Masala:
A small stick of cinnamon1 star anise
2 Green & black cardamom
1.5 heaped tablespoons coriander seeds
3 dry red chilli
3 fresh green chilli
2 tablespoons shredded coconut
1-inch piece of ginger
6 massive cloves of garlic
Leaves from around 8 sprigs of coriander
To Make the Biryani Masala:
In a teaspoon of oil fry, each of the spices adds them one after the other. This will become our curry paste.
To Make the Mushroom Biryani:
Wash rice & drain the water.
In a pressure cooker or heavy bottomed vessel, heat the oil, add cumin seeds, add cashews, fry until golden brown.

Now add the ginger-garlic paste and then add the turmeric & tomato in and fry until it turns mushy. Add mint leaves and fry it.
When all the spices mix well then put the chopped mushrooms up and running. Cook it for about 6-8 minutes on a slow flame and keep it in the middle. After that add water to it and then run it. Now add rice and remaining half remaining mint leaves and coriander leaves in it. Cover the kitchenware and slow the flame.
Check it in between that rice has been cooked and the water has dried up. If you think the water has dried up and the rice is not cooked yet, open the lid and mix half a cup of water in it. You have to check it several times, otherwise, the rice can burn.

After that, when the rice gets cooked, leave it for 5 minutes, and then mix it with a whistle. Now your mushroom biryani is ready. Serve it with onions and tomatoes.
